〔食譜〕59元出好菜:鳳梨炒蝦球(蝦排)

~阿基師的59元出好菜~
菜名:鳳梨炒蝦球(蝦排)

材料:蝦6隻、罐頭鳳梨片120g、美奶滋3大匙
沾粉:麵粉、太白粉皆2大匙、蛋汁

作法:
1.草蝦去蝦殼留蝦尾,蝦背開蝴蝶刀去泥腸,斷掉腹部的筋,用紙巾擦乾,並放進塑膠袋中,用刀背輕壓將蝦身壓扁、壓大後備用。
*腹部的筋是神經索,不是腸泥喔!斷掉腹部的神經索,蝦就會炸的直直的,不會彎曲。
*用塑膠袋拍平,甜鮮味不會跑掉,肉質也會拍鬆,再裹粉後,份量就會變多。

2.取水晶碗放入適量的麵粉、少量的蛋液,調出濃稠的麵糊備用。

3.蝦子表面先沾麵粉,再沾上麵糊,再沾上太白粉備用。

4.熱一約160℃油鍋,將蝦片放入鍋中炸至金黃色便可撈起。
*筷子擦微濕的布,放入油鍋中,有小泡泡就表示油鍋可以了。
*蝦片要下鍋時,需轉小火一點,約40秒蝦子就熟了,再用高溫逼油起鍋。

5.鳳梨片放入成品盤,再將炸好的蝦子放入,擠上美乃滋即可。
*生蝦子保鮮法:用鹽水泡著放進冰箱保存,頭不會變黑喔!

ha...no,this "fried shrimp balls with pineapple" isn't my works.^^
I search the recipe from the website of "Taiwan's cook show".
If tag is "自己做菜DIY" in my blog that means the dish is cooked by myself. But it's only 30 dishes@@" and not delicious, I will "cook" hard.
